Grilled Cheese Sandwich Ingredients: 1 medium onion, diced 2 tablespoons olive oil 1 tablespoon minced garlic 1 large tomato, diced 1 tablespoon diced fresh cilantro, leaves, stems removed 1 cup shredded mozzarella cheese 1/2 cup shredded cheddar cheese 1 cup sour cream, divided 2 cups shredded fresh cheddar, divided 1/4 cup shredded Parmesan cheese Instructions Cut the onion into thin slices.
Add the olive oil, garlic, tomatoes, cilantro and sour cream to a large skillet over medium heat.
Add tomato slices, peppers, cheddar and cheese, stir until everything is well combined.
Add cheese and sour.
Reduce heat to medium-low and cook until cheese is melted and cheese is golden brown, about 5 minutes.
Add cheddar.
Return to medium heat and cook another 5 minutes, stirring frequently.
Add sour cream and cook, stirring occasionally, until smooth.
Serve with griddled cheese and cheddar as garnish.
Recipe Notes This recipe can be made ahead and reheated to reheat on a grill.
If you make it ahead of time, it can be reheated and frozen for a later meal.
If not, just reheat and freeze.
If refrigerated, the cheese can be refrigerated and reheating the next day.
